It was Didier Dagueneau who convinced Eric Bordelet, former sommelier at Paris’s three-star Arpège, to develop a new, artisan cider with character and food pairing possibility. Eric refurbished his family’s ancestral orchards and cider works, uses his knowledge of viticulture and farms biodynamically. The natural traditional fermentation takes place in vat or barrel and in bottle over weeks and months. This is a classic dry cider, mellow fizz in the mouth, yet lively with plenty of acidity. Extremely refreshing, it’s picnic perfection!
